Actually it was soy and lentils. Thus the name.

Not the most exciting of foods, but nutritious and filling and frankly much better than the stuff to be had at the Academy back on Gallifrey.

I thought the green came from algae. Hmm. I could be confusing it with something else. I know the movie was telling people it was soy and lentil. Now I'll have to reread the book.
