A number of years ago I bought the usual dozen at the grocery. Every single one was a double yolk. I think that was the last time I had a double yolk egg.

I was once a Candler Line Operator for a commercial poultry research farm in N.H.

That's not supposed to happen. Those eggs were meant to be together, but they weren't meant to go to market.

I think there are some egg production places that have no objection to sending double-yolk eggs to market. When I get extra-large eggs there are always at least two double-yolks per dozen. I have no problem using them, except for deviled eggs it's a bit odd.

ETA: I mean - all eggs are special, obviously, in their own way. But some are just specialler. You know what I mean. ;)

One or even two per dozen is standard. A dozen together suggests that they were candled and meant to be used for breeding stock.

You can make money on double-yolk eggs for specialty restaurants and certain kinds of baking.
