A "high density core" would create natural gravity on its own. The trouble is getting it moving if you put it on a spaceship, since a ship massive enough to have significant gravity would need incredible amounts of energy for propulsion. To figure out how much gravity it would create, use the gravity equation.

Use the dwarf star compact matter theory. incredible mass in small peices. I didn't google it but you can

I can think of a couple.

If I recall correctly, the gravity in 'Orbitsville' was created by a layer of neutronium.

The craft in 'Wigner's Friends' generated gravity with a collection of point sources. You'd get a sea-sick feeling every time you pass too close to one of the point sources.

Just a couple of examples from sci-fi...
