Tonight it's simple - veggie burgers and home cut french fries.

I probably should have planned something, but since hubs isn't whining about what's for dinner and I'm not hungry, I'm not going to worry about it too much. We have snacks if tummies start rumbling.

Marinated some shrimp. Cooked 'em on the grill with a red pepper, yellow squash, some asparagus, and cauliflower. Also had some leftover coleslaw to round the meal out. Generally like to have a cocktail when I grill but I'm not supposed to do that for a while longer -- doctors orders, because of the concussion.

I don't know. Was just debating this, so perfect timing for seeing the thread. Was actually thinking about ham, homemade biscuits, some veggie, and southern fried potatoes. But, no, not interested today. ]

So very bored with food. Blah.

Tonight we're using up the leftover roasted chicken from last night to make chicken salad. Plain old boring sandwiches for dinner. :)

I'm probably having some steamed fish in a bag thing for dinner (tastier than it sounds, really)... going home late, so I doubt I'll feel like cooking.

Ha! I thought of that thread also when I saw this one.

Later I'm going to make scampi from fresh shrimp I bought today, then serve it in a creamy Alfredo sauce over linguini.

Tonight was a box of mac and cheese with a can of chili....but I tossed in some green onions, bell peppers, and a few dashes of Lee & Perrins (which, for the record I put in EVERYTHING).

I think I might have pasta for dinner. With chicken. And a Napoli sauce with onion, garlic, chilli and oregano. Yummo!

Shepherd's pie. Only with beef. So I guess cottage pie - but without the pastry. Perhaps it's really just mince with mashed potato and cheese on top.

Brussels pate washed down with Amontillado Sherry. Prawn stir fry accompanied by Aspall Cyder. Strawberries and very thick cream. Which as I am lactose intolerant is maybe not the best thing I can have - but I do not care! Will enjoy every mouthful. Followed by coffee, Turkish Delight and a small Tia Maria.

Hey, anyone ever use cream cheese filling, what do you use it for? I was thinking about making some cannoli and filling them with it...but, I don't know I keep doubting myself that it would be "right". Then I got to thinking about making some donuts...and then, and then, and then I just can't decide or think of many ideas right now...

I make my own pizza dough and once a month a huge vat of sauce that gets divided up and frozen to be used as needed. It usually lasts about six weeks, so naturally the last batch has been in the freezer, fermenting, is the best one.

The pizza for dinner tonight will be REALLY GOOD. :)

Tonight it's green peppers stuffed with beef, rice and pork, heavily seasoned and topped with marinara sauce and freshly grated Parmigiano-Reggiano.

It's all prepped and ready to go into the oven in about an hour or so.

I saw a recipe for chocolate éclairs that used a cream cheese filling instead of cream or crème anglais. Looked sort of interesting, but not delicious.

It's my one night a week to go all out. Pollo poblano (chicken in a poblano chile cream sauce) rice made with tomato, onion, garlic and cilantro, refried beans and hand made flour tortillas. Mango cheesecake for dessert. Lots of Corona.

Turkey soup tonight. I pulled out the carcass from the freezer this morning and it's been simmering for hours. It's almost time to prep the rest of the stuff to go in it :)

I've got a batch of kolache dough in the fridge and will make some cream cheese filling to go in part of them, maybe with some dried apricots soaked in bourbon and chopped toasted black walnuts.

There are all sorts of things you can do with cream cheese for filling, sweet, savory . . . all depends on what you mix in it. It's a great base.

I need to do grocery shopping before I can cook anything for dinner tonight (unless I do lasagne, which takes a LONG time to cook!). And after buying groceries, I'm not going to want to cook something that takes a long time, so it'll probably be pizza or something.

Tonight, it will be fish. I'm away on personal business in Casablanca. The Atlantic is less than a stone's throw away. Plenty of fish stalls as soon as I step out of the hotel.

I had panini last night... Crusty Italian bread roll with tomato sauce, 3 cheeses, bits of tomato, and a sprinkling of garlic. Delicioso!

I was going to have pizza, or sweet chilli chicken strips and beer-battered wedges, but it didn't happen.
