I briefly thought about making some hot cross buns today before remembering that the equinox was over a week ago, so decided to make some shortbread instead.
I've made 3 rounds - 1 of earl grey shortbread, 1 of lavender and 1 of a mixture of both. It just now occurred to me that the earl grey makes the shortbread look darker in colour, and I realised I could have made them into shortbread moons quite easily - cut a crescent out of one lavender and one earl grey and swap them around before baking. Maybe even do the central one lemon flavoured with some finely grated peel instead of being a combo lavender/earl grey round.
