View Full Version : Equinox shortbread! Wish I'd thought of this a week ago!

I briefly thought about making some hot cross buns today before remembering that the equinox was over a week ago, so decided to make some shortbread instead.

I've made 3 rounds - 1 of earl grey shortbread, 1 of lavender and 1 of a mixture of both. It just now occurred to me that the earl grey makes the shortbread look darker in colour, and I realised I could have made them into shortbread moons quite easily - cut a crescent out of one lavender and one earl grey and swap them around before baking. Maybe even do the central one lemon flavoured with some finely grated peel instead of being a combo lavender/earl grey round.

Heh, it was very yum actually! So yum I made a second batch 3 days ago and, I'm really sorry Haggis, my other half finished them already.

S'really easy to make though if you want to. Take the simplest shortbread recipe ever:

100g flour
65g butter
40g sugar
splash milk
1/2tsp vanilla extract

Cream butter and sugar, add vanilla. Sift and add flour, mix to crumbs. Add tiny amounts of milk a tsp at a time, mixing in between until mixture is just sticky enough to come together.

For the lavender one, use lavender sugar instead of ordinary sugar. For the earl grey one, just tear open three earl grey teabags and empty the contents into the mixture. For the lemon one, omit the vanilla, use lemon juice in place of milk and add the finely grated peel of one lemon to the mix.

Roll out each version to about 1cm thick, then either cut with cookie cutters or press into a round, greased and lined tin, prick all over with a fork and bake at 160C until just browned at the edges, then turn out and leave to cool.
