Does PoC only include Africans/African Americans? Are other ethnicities included because some of my questions are about/for them as well.

POC stands for Person of Colour. It's a catch-all term meant to encompass anyone who isn't white. Because when you're discussing racism as a general thing, saying POC shows you're not excluding the effect that racism has and continues to have on a whole range of people.
