Should I include the quotes below:

No one else but Mom would even notice, but I know he’s dying for me to say “yes.”

I wouldn't personally, but that's just me. It's not actual spoken dialogue so:

No one else but Mom would even notice, but I know he’s dying for me to say yes.

They're not necessary. You can take my word for it, or alternatively :-), you can base it on this:

Chicago Manual of Style, 16th ed., section 13.38: Single word speech:

Words such as yes, no, where, how, and why, when used singly, are not enclosed in quotation marks except in direct discourse.

Ezra always answered yes; he could never say no to a friend.
Please stop asking why.
but
“Yes,” he replied weakly.
Again she repeated, “Why?”
