Sat Nam! (literally "Truth Name"--a Sikh greeting)

You know those things at a carnival where you bring a hammer down and something rises to hit a bell? What are those things called? And what is it that rises?

I want to use the image as a metaphor, but it lacks a little something if I don't know what the things are.
