My MC is an apprentice. In the narrative would master be capitalized as it would be in dialogue?

If it is used as his name then yes, capitalize: "Joh was surprised when Master was not there in the morning." Also, capitalize if it's a title used with his name: Master Yoda.

Do not capitalize if used in a more general sense: "Yoda was Joh's master, well skilled in the craft."
