I've read in some places that the way to submit queries is in a number 10 envelope where you not only include your query but also the folded, other #10 envelope for the agent's response. Is this right? Doesn't that feel too crammed? Wouldn't it be better if I sent my query in a 9x11 envelope where everything can go more "comfortably"? Or is this way (the crammed way) a true and tried method and I shouldn't mess with it? Thank you. (If you can direct me to a place--or website--where I can read more about submissions I would appreciate it.)

Larger envelopes require extra postage. Stick with a #10 and a 37 cent stamp. Some secretary or intern is probably going to open it. What is important are the words in the query, not the envelope.
