I decided to sign up for our local CSA (Community Supported Agriculture) and we just received our first batch of spring veggies. Among the leeks and spring onions, I also have leek scapes. I've looked them up online, and although there are several recipes for garlic scapes, I haven't found any for leeks. Has anyone ever tried cooking leek scapes before? Any recipe ideas?

Thanks!

The flower stalk that grows from the leek. If left alone, it produces a round head of white flowers. :D

Ah. Never heard that term "scape" before. But I grow chives, which produce a purple flower ball that is eminently edible and can be used like any chopped up oniony thing, so I imagine leek flower stalks ought to be useable in a similar way.

I just chopped up one of my scapes and tasted it. It is very pungent and tastes like a mix of onion AND garlic. I was surprised at how strong their flavor is, since leeks are mild compared to yellow onions. I plan to put some in my Thai cold noodle salad.
