You're talking about the whites of the eye turning black post-mortem? Or is this postmortem change just in the iris? (http://www3.interscience.wiley.com/journal/119392943/abstract?CRETRY=1&SRETRY=0)
Is this an immediate change you're looking for? Would burst blood vessels/capillaries do the trick?

What I'm thinking is, in the context of the story, a corpse's eyes turn completely glassy black, both the whites and the irises. This is due to a supernatural element of the story, but I want to know if there's a way the medical examiner might try to explain it away as a real thing.
I have never seen black sclera in a living or dead animal, so I'm no help there...
