I have a friend whose hubby is a fanatical gardener. I was given three bags full of beets like these. One is cut up and overfilling a saucepan I thought would be big enough. Its twin gloats beside it. Background removed to spare the tender sensibilities of better housekeepers. (I could have just thrown a towel over the mess, but I wanted to sit down at the computer anyway.)

I'm jealous. Chilled beets with vinegar and olive oil, sliced onion, and salt/pepper to taste ... makes my mouth water ... or was it the doorbell?

This is just the start of something very beautiful:

Step 1: Stew, pickle, or whatever it is you do to beets
Step 2: Bring to Australia
Step 3: Slice and put on hamburger, preferably with cheese, a fried egg, salad (lettuce and tomato), and barbecue sauce
Step 4: Bring it down to the beach with a slab of VB
