View Full Version : Tonight's ultra-simple dinner

I am a gardener, in the far north, which means we're going to get snow any day now. So tonight, I dug the rest of my potatoes. I also grow kale, which is the hardiest of greens, likes frost, and I've even harvested it in snow in previous years; so I cut some of that, too. Having that stuff, I invented a dinner dish:

For dinner:

Enough fresh potatoes, cubed into bite-sized pieces. Five or six leaves of kale, shredded (get rid of the tough stem). And one leek (alas, from the grocery store, which I had in the fridge), sliced. Add butter, a touch of ground pepper, and microwave the entire mess until the spuds are soft.

Turned out absolutely wonderful, and was plenty for wife, daughter and me. My tummy is happy and I'm going to bed now.

that sounds a lot like my variation on potato leek soup, which I make with some kale to boost the veggie content. It's really good AND I just grabbed all the goods to make it at the farmer's market.
