A publishing company that is very interested in my project has asked me who I would be able to get to write my forward. I've talked to a couple authors that write in my genre but have asked none of them. What is the protocol?

If it's a nonfiction work the publisher probably wants someone with acknowledged credentials in the subject area. Even so, you can still find a way to you the words of the well know published author.
