Cold Pasta Salads

The weather is warm. I am boiling a bunch of noodles in a big pot, and I am looking forward to making some cold pasta. Anyone have any great recipes? Any good sauces/dressings?

The Costco store near us has a great Vidalia Onion dressing that I've used with cold pasta and tossed with medium black olives (halved) and chopped red and green peppers. The Vidalia Onion dressing is sweet. Yum!

ETA: Of course you can also add any veggies like cooked and cooled chopped broccoli, peas, green beans....

I'll put just about anything in a pasta salad. Whatever's in the fridge. Red peppers and celery and cucumbers, cherry tomatoes, sometimes frozen peas or corn, lemon juice if I have it, and olive oil, salt and pepper. To make it a meal, I add diced ham.

Ok... this is what I made for dinner tonight....

Chopped,
Parsley
Cucumber,
Tomato,
Walla walla onion,
and carrots.

The dressing...
Juice of one lemon,
rice vinegar
olive oil
black pepper.

It was quite tasty! Mr. Turkey added parm. cheese, but I liked mine plain. :)

Mmm...

I put in fresh basil, sauteed cherry tomatoes and garlic, sauteed asparagus, and shredded chicken and toss it all with balsamic vinegar and olive oil.

For a different take on this classic, I like to make this dressing:

-tahini
-Tamari sauce
-tabasco
-water
-lemon juice
-lots of garlic

Mix everything in a blender and put it in a pasta salad. Glorious! And I say this as a mayo afficionnado! It's just that sometimes it's fun to do it differently.
