Put some corn chips in a bowl, top with chili, sprinkle with shredded cheddar. Nuke for 60 seconds. Viola! Frito Chili Pie.


English Muffin pizzas.

Fork split the muffin.
1 spoon of sauce right in the middle.
Sprinkle on some shredded cheese.
Toast.

Should be about 3 1/2 minutes

Not one of my favorites per say, but it gets the job done in a pinch:

-Wheat tortilla, spread with peanut butter, granola and a little honey. Roll it up, eat!

I mean really, you can put pretty much anything in a wrap under 5 minutes. :)

Cream cheese and paper-thin cucumber slices on pita (with or without the dill).

Leftover rice, leftover black beans (or canned beans, rinsed), tossed in a bowl with salt, pepper, lime juice or red wine vinegar and olive oil. If you've got more time, a chopped red pepper, green onion and corn make a lovely addition.

I'm a wrapper, too. I keep tortillas and lettuce on hand at all times, and just grab whatever leftovers I have and toss 'em in...London Broil with blue cheese crumbles makes one of my favorites.

Snap out the stalk and munch wile you fill the gap with dip or mustard or mayonnaise or pickle or something.

Then much that too.

Preparation: 5 seconds. Eating time: 8 secs. Clean-up: 0 secs :)

New England Boiled Dinner

We call this one New England Boiled Dinner.

In a medium size sauce pan dump:

1 can of drained whole potatoes (I like to rinse them too)
2 cans of green beans (with liquid)
1 can of drained carrots (or whole baby cut carrots)
1 can of corn (with liquid) (or whole corn on the cob)
1 pre-cooked sausage link per person (I like turkey or chicken sausage)
quarter of green cabbage (per person for everyone that likes it)

Cover, bring to boil, turn down to low simmer until cabbage is tender. Serve with spicy German mustard and a crusty French bread.

So technically this one has a 5 min. prep, 5 min.-ish cook and 1 min. clean up (toss cans, put pan in sink) but it is one of our favorite quick cook dinners, especially in the winter.

Left over spaghetti. Scoop of cottage cheese, scoop of parmesan cheese, and a couple of tablespoons of sundried tomato pesto. Mix all together, microwave til hot. Yum.

Take a tortilla -- spread with hummus, baba ghanouj or bean dip, add as many veggies as can fit in.

Microwave a potato or sweet potato. (Maybe this gets over the time limit, but you don't have to be doing anything while the microwave is doing its thing.) Put salsa, leftover spaghetti sauce, a favorite seasoning mixture, or just about anything else on top.

Open up a can or two of beans. Open up a can or two of tomatoes. Throw in any leftover or bits of frozen veggies you have. Sprinkle with appropriate hot sauce (I must have about 12 different kinds). Last night I experimented because what canned tomatoes I had are intended for actual recipes. So I threw in a can of pizza sauce in with the two cans of beans, plus some leftover onion, bell pepper, some baby spinach that needed to be used up, and a partial bag of frozen corn I had. I was mixing my cuisines, but it worked.

They sell these fingerling potatoes at Trader's Joe's. Just zap them in the microwave for a few minutes, mesh them, and add Bacos and some sauce (I like a bit of a ranch). YUM.

Pour over rice
add sliced almonds

I've never had Baba ghanouj before, so I think it's time I tried it...

One of my favorites! You won't be disappointed.

For whatever reason, I can't eat a lot of hummus. But baba ghanouj is just awesome ... healthier, too.
