Jamie Oliver's creamy rice

For those of you that wander to other threads, you may or may not know that I have a stupid crush on Jamie Oliver. But anyway, I was watching the show the other night and he made this beautiful-looking creamy rice and put strawberry jam on top and it looked absolutely heavenly!

I tried it the other night and it was divine! I served it with a spoonful of apples stewed in a bit of brown sugar and half a ton of cinnamon.

It uses arborio rice, milk, bit of sugar and some vanilla. Cook until it attains that beautiful creamy consistency.

I am so making it again this weekend!

From Jamie’s site.

1 vanilla pod
75g / 2 1/2oz pudding rice
600ml / 20 fl oz / 1 pint full fat organic milk
2 knobs unsalted butter
50g / 1 3/4oz caster sugar
1 wide strip of orange zest
Strawberry Jam or Seville orange marmalade


Score down the length of the vanilla pod and scrape out the seeds from the inside. Combine the rice, milk, butter, sugar, orange zest, vanilla seeds and vanilla pod in your Tefal saucepan and place on a medium heat.

Cook gently, stirring every now and then, until the rice is tender and has absorbed all the liquid.

Take off the heat and add a big dollop of jam to the rice pudding before serving with some zested orange sprinkled over the top.

The British answer to risotto - sweet, sticky, creamy and delicious!

Thanks for posting the recipe for me, Brian.

I used arborio rice and reduced-fat milk. A good helping of vanilla and only a couple of tablespoons of sugar. I put it in the rice cooker, brung it to the boil, then took the lid off and left it on the low setting to thicken up, stirring occasionally.
