Mine stands up quite well. I was thinking about sharing a recipe here last night while my arms were wrist deep mixing the loaf. I've tried at least a dozen variations over the years, but this concoction has the distinction of winning over fans who claim they hate meat loaf until they've tried this version.
Prep time is about twenty minutes. In a large mixing bowl, combine:
One pound ground beef or chuck
1/2 pound ground pork
1/2 cup seasoned Italian bread crumbs
1/2 cup grated Parmesan cheese
1 large egg
1/3 onion, minced
1/4 tsp black pepper
1 eight ounce can of tomato sauce
Mix the meat and all of the above ingredients and form into a loaf about four inches high. Place meat into a shallow baking pan.
In a smaller mixing bowl, combine:
1/2 cup of water
1 eight ounce can of tomato sauce
3 tbsp white vinegar
3 tbsp brown sugar
2 tbsp yellow mustard (the kind you put on hot dogs)
2 tbsp Worcestershire sauce
Whisk sauce and pour over meat loaf. Bake at 350 for ninety minutes. Baste the meat every twenty minutes or so. Then serve it to people who claim they hate meat loaf and you'll enjoy their positive responses.
