How well does your meat loaf?

Mine stands up quite well. I was thinking about sharing a recipe here last night while my arms were wrist deep mixing the loaf. I've tried at least a dozen variations over the years, but this concoction has the distinction of winning over fans who claim they hate meat loaf until they've tried this version.

Prep time is about twenty minutes. In a large mixing bowl, combine:

One pound ground beef or chuck
1/2 pound ground pork
1/2 cup seasoned Italian bread crumbs
1/2 cup grated Parmesan cheese
1 large egg
1/3 onion, minced
1/4 tsp black pepper
1 eight ounce can of tomato sauce

Mix the meat and all of the above ingredients and form into a loaf about four inches high. Place meat into a shallow baking pan.

In a smaller mixing bowl, combine:

1/2 cup of water
1 eight ounce can of tomato sauce
3 tbsp white vinegar
3 tbsp brown sugar
2 tbsp yellow mustard (the kind you put on hot dogs)
2 tbsp Worcestershire sauce

Whisk sauce and pour over meat loaf. Bake at 350 for ninety minutes. Baste the meat every twenty minutes or so. Then serve it to people who claim they hate meat loaf and you'll enjoy their positive responses. :)

I have another recipe for "Italian meatloaf" that is slightly different, Silver.

I'll have to write up my blue cheese and bacon meatloaf recipe for this thread. Yum.

Nice! My meatloaf rules too.

1 lb. ground beef
1 lb. turkey
1 egg
1 can seasoned diced tomatoes (sp?)
Throw in seasoned bread crumbs ( I have no idea how much)
2 TB dried onions
splash of milk

mix, top with extra breadcrumbs, and bake until done. Serve with onion gravy and stuff.


I like meatloaf!

I like to shred veggies into my meatloaf. Carrots work well without making the meat too loose.

We all know how much trouble loose meat can be.

My mom's meatloaf crunched. I never understood crunching meat. I can't handle meat loaf to this day.

As for the performer Meatloaf, I loved his work.

I can sort of understand. While my mother's meatloaf didn't crunch, she grew up in a time when people were advised to cook meat thoroughly. So she did. Try getting a medium rare burger out of my mom. I finally managed to convince her that well-well-done wasn't always needed.

Funny, I have some friends who are the same way and they're much younger. They will look at my burger or steak and go, "That thing is raw!" It's really not, just medium or medium rare.

I don't have a recipe because I just throw a bunch of stuff in a bowl and mix it up...but it's delicious every time. :)

Um, I'm not sure I've ever had meatloaf. *shrugs*
It's similar to creating a giant meatball, only you shape it into a loaf (like a bread loaf) prior to cooking. It sounds complicated at first, but the meal is very easy to prepare and cook. And has been mentioned here, you can add just about any ingredient you'd like to flavor the meat.

I'll have to go look up my recipe, but it's only a general guideline. I most often kind of wing it until it smells right. I know it involves a meatloaf and sausage seasoning blend that is next to impossible to find around here.

I love some meatloaf, but the husband doesn't care for it, so I only fix it once or twice a year.
