Sweet potatoes & pumpkin.
They're loaded with vitamin A and good for the eyes.
One serving of sweet potatoes provides 286% of one's daily need for Vitamin A.

pumpkin soup with a dab of sour cream and oodles of cinnamon, then again I can never get enough cinnamon.

I used to go to a shop (back in the days when I was a working member of society) and buy Sweet Potato Casserole for my lunch. It was the greatest thing I have ever tasted.

One way to satisfy your sweet tooth, take care of a side dish, and have sweet potatoes, cut them up like frenchfries, coat them with sweet spices, lightly of course, bake them in the oven with a light spray and eat them like french fries.

Please specify sweet spices. I've only had them with sugar and cinnamon...

Well here's a spicy variation of sweet potatoe fries:

Seasoning Mix:
2 T ground coriander
1 T ground fennel
1 T dried oregano
1 T Aleppo Pepper (or use a smaller amount of cayenne pepper)
2 T kosher salt


Preheat oven to 425 F. Peel sweet potatoes and cut into strips about 3 inches long and 3/4 inches thick.


Here's the sweet one:

1 medium sweet potatoe
nutmeg
cinnamon
sugar
butter or oil

(Or you can use brown sugar if you want.)

Simple salt one

2 large sweet potatoes
1 tbsp of olive oil
1/4 tsp salt


Just make sure you absolutely do not crowd them or they steam instead of crisp and you get mushy ones.

Do you know that canned pumpkin (not pumpkin pie filling) is used to help dog diarreah? It has lots of fiber, which helps if the dog is having poo problems, either way.

Sweet potatoes are in the category of veggies that, for some unknown reason, my mother never served during my childhood. I discovered a deep and abiding love for them this past weekend, when my MIL made baked sweet 'taters to go with dinner. No butter, no brown sugar, just a sprinkle of salt was all they needed. YUM.
