The classic Tom Collins is a gin, lemon, and soda mix, but there are a lot of variations (one with vodka). It's nice on a warm day.
I used to drink whiskey sours too. ETA, Wiki's Tom Collins recipe: Serve with a cherry, or orange slice.

Okay, so I have to complain.
Mum has a lawn guy come round once a fortnight to mow the front and back lawns, right? He charges $20. If we're not home or haven't left money out for him, he leaves a note saying, "Bill is now $20 (or $40 or whatever, depending on how many times this has happened)." Okay. So a while back, he was doing the lawns, and he had already written up the note, "Bill is now $20." He had just stuck it in the door when I opened the door and paid him. The next time he comes is on a day we weren't expecting him. We were both out, and the gate was locked so he could only do the front. He leaves a note, "Bill is now $40." Except I'd paid him the last time, so it should've been $20. Of course, it really should've been $10, because he only did the front. With me so far? So today he came again. We left $40 out for him, under the doormat out the back. $20 for last time (even though it should've been $10 grr) and $20 for today. I just got home, and in the front door is one of his notes. "Bill is now $75." WTF? Okay, so he hadn't taken the $40. He probably thought we already owed him $40, but that would only bring the total up to $60. Not $75. So WTF is up with that? I have 2 guesses. 1. He upped his price to $25 per visit, and billed us retroactively, on the false belief that we already owed him for 2 visits even though 1 of those he'd been paid for already. He then either didn't notice the $40, or did notice it and thought he'd ignore it so he could charge extra. 2. It was raining today. So perhaps he charged $35 to mow the lawns in the rain, which is pretty cheeky. ... When mum gets home and sees the bill, she's gonna flip. I don't think he'll be our lawn guy for much longer...

Yeah, I agree about firing him.
Charging $20 for half a job is cheeky, but it's never been pointedly stated that he'll get half for doing half. (It should be common sense, but we might have been willing to concede that point. Maybe.) Charging for 2 visits when I paid him for the first one is perhaps just a clerical/memory mistake - he probably had a carbon copy of that "The bill is now $20". This point, however, I'd say to him, "You should've ripped up the carbon as soon as I had paid you." But today just takes the cake! It's ridiculous! (As for paying by cheque... I don't actually have a chequebook. *shrug*) Fire him! Out of a cannon, into the sun!

Well, I bet your mother has a chequebook. Have her pay him or the next guy.
Else, only pay him with cash when he's actually there and you get a receipt (or have him sign one). Make this one of your life lesson: Don't pay for anything with cash unless you get a receipt (unless it's something like a drink at a bar).

Mmm. In hindsight, we should've been getting receipts.
It all seems pretty dodgy to me, but it's mum's thing. If it were up to me, I'd pay someone from a big reputable company to mow the lawns once every 3 months and just have a jungle lawn most of the time... (Maybe. Actually, if it were my house, I would've either chosen a house with no garden, or had enough money for a reputable company, or both.) I shall be advising mum to fire him promptly. 3 strikes, you're out.

It just makes life easier. Sometimes people make honest mistakes (or you will), and sometimes someone will try to rip you off.
And for heaven's sake don't pay for any home repairs or projects upfront.
