What's the proper format for a character who is hiding her identity?

Hi,

I have a character who hides her identity in a couple of scenes. Do I just mention this in the scene action, or do I create a new identity for those scenes, like UNKNOWN PERSON?

If the script reader/viewing audience aren't supposed to know, then assign her a descriptive label and then, at a suitable moment, show the transition back to the original character, e.g. and just for fun's sake,

OLD BEGGAR WOMAN
Penny for a poor old lady, sir?

BAD GUY
Be off with you, ugly crone!

Bad Guy pushes Old Beggar Woman away and marches off with his henchmen.

When they're gone, Old Beggar Woman slowly straightens... she pulls off her fake nose... her bushy eyebrows... her white wig... it's Kate! She smiles as she flips Bad Guy's purse into the air and catches it, the heavy coins CLINK.

Thanks! That was the last thing I needed. The script is complete! (Now, if I can just beat the odds and actually sell it.) :)
