4-1/2 lbs of chihueycow will probably cut down to about a 2-lb pile of meat, maybe only 1-1/2. There's a lot of bone and gristle in there that ain't really edible and then there's the hide which is tough and completely inedible (I wouldn't even try to make chitlins outta' it).
Now, it's more likely to be a series of strips and chunks rather than steaks given the critter's build and all, but you could put all that through a grinder and come up with a couple pretty decent chihueycow patties.
Throw 'em on the barbe over an open flame, sear 'em on both sides, and smoke the begeezus out of 'em for an hour or two and you might have something fairly decent.

A deep pit roast for a few hours could be good too. Works well for goat.

Now, the dragon? That tail would probably be nice with some Cajun spice. I've had alligator. Alligator-dragon, can't be that much difference. Just more meat on the dragon tail.
Then there's the sheep. Mutton's very, very good prepared in any variety of ways. Why, Lizzie Borden had a recipe that was to die for...
