A pro friend of mind suggested I look at a digital-only imprint for my newest book. Googling it gives me the impression that it's been around several years, serves dozens of writers, and is a professional operation. But I'm uncertain. How is such a publisher any better than self-publication via Amazon?

The comparison is about the same as for a paperback printer and Amazon Createspace. Does that specific publisher get better results? for example, is their editing art and packaging excellent, do they have loyal customers leading to higher sales volumes, are people impressed just to hear you are published by them, are they available from many different popular e-tailers, etc...
