How Do You Handle Contracts (online)?

Hey, all!

I was wondering how you all handle contracts, and whether you've ever had an issue with getting paid.

I'm ready to move from sites such as Upwork (and my relatively low-paying "regular" guy) to seeking work independently. However, I am concerned about getting paid. What if the person takes my work, cuts and runs? I don't know why I never considered this before - probably because I've always worked for someone else, one way or another. ;) Such problems don't generally arise under those conditions.

I searched "contract" in the searchbar but came up with all sorts of posts that seemed unrelated to contracts...don't know what happened there.

1. How do you "receive" a contract when you're communicating remotely?
2. Does anyone know of a sample contract/contract template I might use for articles, blog entries, press released, web content, etc.?
3. What happens if the client doesn't pay?
4. Do you generally request net 30?
