I hadn't heard about this, but a waitress volunteered the information this morning.
Late last August there was a fatal explosion at a Florida plant which processed nitrous oxide.
As a result, nitrous oxide is in short supply in the US.
Medical and dental uses get priority.
Canned whipped cream (and industrial cream whippers for restaurants) relies on nitrous oxide.
Which means that since at least November (when ConAgra suspended production of all varieties of "Reddi-Whip") there has been a shortage nationwide in the US of supermarket whipped cream and whipped cream in restaurants.
There is no word on when the nitrous oxide supply chain will be reestablished.
