The author refers to the characters usually without their names, just as 'el chino' or 'los chinos', which works fine in Spanish. I think I'll go for the Chinese man / men. Thanks for all your input. It's a difficult one, because the grammatically correct term "Chinese" is both adjective and noun, so it sounds weird to everyone when used as a noun.
