I received a request for my full manuscript from All That Matters Publishing I did read their contract and I understand it. BUT, are they someone to consider as a decent publishing company? OR, should I run away as fast as I can.

I couldn't find a website for All That Matters Publishing, but there is a somewhat lengthy AW thread here regarding All Things That Matter Press. Is that who you mean? If so, you might want to read it carefully.

For what they are (small, non-fiction books), the covers are pretty normal, to be honest.

I actually think the covers are kind of catchy. Simple and distinct. Maybe not the most creative things in the world, but it quickly identifies their line.
Since OP hasn't returned to clarify, I'll Index this as All That Matters Books unless/until I hear otherwise.

So ... do you in fact mean All Things That Matter Press? There is no "All That Matters Publishing".
