I've had a book published by a University Press. It's a science popularization so I don't know if the experience would be the same. The major thing they did that most small presses won't was have it peer reviewed. That is they had it looked over by appropriate academics to garner opinion and suggestions.

It depends quite a lot on the press. A university press with standing lends an air of literary authority to a book.
A university press with standing looks great on an author's CV, esp. when the author is trying for a state or foundation grant.
