Technically, the ice cream I just made is a fig newton ice cream. It has dates and cocoa powder, plus honey, and no sugar. I used coconut milk instead of cream. We'll find out in a few hours if it's scoopable.

I almost needed the cherry life saver - as the waves took turns slamming me into the sand.

This weekend, I made another attempt at a non-dairy, non-processed sugar ice cream. I think it turned out well, but there is room for improvement. That was #17, and I'm confident #18 will be much better.

Since the total eclipse will pass almost directly over Albany, Oregon, on August 21st, our little town will triple in size for the two-minute event.
There being no room at the inn--all have been sold out for ridiculous prices for months--you're all welcome to stay in our spare room on the night of August 20 for only $500. I'm thinking the queen bed in there will hold five, right?

I capitalized both Albany and Oregon on the no-refunds contract for a first-come, first-served spot on the guest queen bed.
Does that include special glasses, food, booze & maid service?
We originally bought a box of viewing glasses, but Amazon warned they're not the official eye-savers, so everyone will have to share the one official pair.
Same with the bag of potato chips and six pack of beer. Hey, it's only for two minutes.
