Then why not describe it as such?

I also have a naturally white-haired character. By the time his hair color is mentioned, he was already established as an athletic 40ish, and when it did get described, it was in conjunction with his other physical traits (including skin tone). So there's no confusion about age, health, etc. vs the white hair.

As a side effect, when another fellow with near-white hair showed up, he came off as slightly younger. (Which was good, cuz he is!)
