Just who's fault was it

Sneaky thing about that stuff is that boils and boils and doesn't look like it's doing much. It picks up speed real quick towards the end. Especially with the small amont you had.

best you can without a refractometer is to watch the volume of what you have left and stir it often as is gets close to what you expect. When it starts to sheet a little coming off the spoon as you lift it out pan and spill what you have in the spoon back into the pan. When that happens, it's going to come together VERY quickly. I'd probably take the pan off of the stove and taste it. If it's not quite there yet put it back on the heat/ repeat. Go by taste, not viscosity since it will thinner than you might expect while it is hot.
