How much to reveal?

I was just curious to know how everyone goes about gathering information for their books, without revealing too much about it so others will steal your ideas?
I'm particularly interested in how this relates to non-fiction, since that involves others more than a story you make-up in your imagination.
Do you contact the publisher first?
Has putting a call out for submissions ever blown up in anyone's face?
I had a bad experience where I had to ask for help from an agency in order to complete a nonfiction project. They ended up contacting the publisher I was working with and proposing competing projects. Luckily, they weren't able to follow through, and I was able to complete my project, but it was touch and go for awhile.
I know other people who have had the same thing happen, and are very secretive about their projects.
Being new to all this, I guess I'd like some advice on how to work with others if you have to, without getting worked over, particularly if you're wrting something like an anthology where others are an integral part of the project or an extensive research/interview piece.
I feel rather dumb, asking, but I've run out of options.
