Is it acceptable to use Bureau of Labor Statistics numbers to create a chart for magazines or books? I know they've a government agency and I searched their website but all it gives is a suggested citation. They have some numbers that I'd love to use for a chart, so I'm hoping I can use them if I cite the source. I just don't want to get the government mad at me!

Yes, you can use them, citing them as you said. Even if they were copyrighted, which they are not, you could use them under the fair use privileges.

Definitely use them, with proper attribution. I love the Bureau of Labor Statistics. Their numbers have provided meat to plenty of my stories.
